FJ40 Specialists???

What are some things you would recommend taking directly to a FJ40 restoration specialist? I want to do this restoration right the first time so where should I fork out the big bucks and take the FJ to the specialists in Gilroy, CA?

Cake donuts.

I don't like the fluffy glazed ones.

And you better not mind greasy fingerprints on the box.
